Prairie Harvest Salad

Prairie Harvest Salad
 

A traditional Ukrainian recipe that my Baba made to celebrate the fall harvest. Bulgur is often confused with cracked wheat but it is not the same. Cracked wheat is the whole wheat berry broken into coarse, medium and fine fragments and can be found at any grocery store.

1 (1) head of romaine lettuce, torn
½ cup (125 mL) cracked wheat
1 tsp (5 mL) salt
½ cup (125 mL) canola oil
½ cup (125 mL) parsley, finely chopped
¼ cup (50 mL) freshly squeezed lemon juice
1 (1) garlic clove, minced
2 tbsp (60 mL) Manitoba honey
salt and pepper to taste


In a bowl, combine cracked wheat with salt; pour enough boiling water over the cracked wheat to cover it by 2.5 cm (1 inch) and let cracked wheat soak for 1 hour or until tender but firm. Drain and transfer to salad bowl.

In a bowl, whisk together CANOLA OIL, lemon juice, garlic and honey; pour over cracked wheat. Add parsley; toss. Season with salt and pepper. Spoon cracked wheat mixture on top of salad greens and serve.
