"Quick Chicken"

Chicken Dukkah

1 tbsp EACH ground coriander, cumin and paprika   ¼ cup olive oil
1 lb chicken cutlets*   cup ground almonds
cup sesame seeds   2 tsp turmeric
¼ cup milk   ¾ cup flour
½ cup plain yogurt   cup sour cream
2 tsp lemon juice   salt and pepper to taste


Mix together ground almonds, sesame seeds, coriander, cumin, paprika and turmeric. Set aside. Mix beaten egg with milk. Coat cutlets with flour, shaking off the excess. Dip in egg mixture then into almond mixture so that both sides are well coated. In a bowl, whisk together yogurt, sour cream, lemon juice, salt, and pepper. Cover and refrigerate. Heat oil in a skillet over medium high heat. Add 3-4 cutlets and cook for 3 minutes per side or until the outside is golden brown and the inside shows no pink. Repeat with remaining cutlets, adding more oil if needed. Serve 2 cutlets per person with a portion of the yogurt sauce.

* To make your own cutlets, use 4 boneless skinless chicken breasts with filet removed. Using a sharp knife, slice each chicken breast in two by running the knife blade parallel to the cutting board, from the thick end to the thin end. Put the slices between wax paper and pound until thin.

Chicken Toasts

4 slices of bread (multigrain or French)   ¼ cup ricotta cheese
¼ cup diced bottled roasted red peppers   black pepper to taste
1 cup cooked ground chicken   2 tbsp olive oil
8 thin slices Old Cheddar or Gruyere cheese   salt to taste


Lightly toast bread. Mix ricotta, roasted peppers, black pepper, chicken and salt. Spread over toast and top with cheese slices. Broil for 1-2 minutes until cheese begins to melt. Sprinkle with olive oil if desired.

Variations: Use 1 cup (250 ml) of diced cooked chicken breast/thigh instead of ground chicken. Use smoked Gouda instead of Cheddar or Gruyere. Use ¼ cup (50 ml) diced sundried tomatoes instead of roasted peppers
