Ginger Beef Salad

| Tasty and quick, this recipe is sure to
become a family favourite. For variety, try serving over cold
cooked rice or pasta. |

(50 mL) |
apricot jam |
| 1 tbsp |
(15 mL) |
grated fresh ginger root |
| 1 tsp |
(5 mL) |
minced garlic |
| 1 tbsp |
(15 mL) |
Hoisin or soy sauce |
| 1 lb. |
(500 g) |
beef Stir-Fry Strips (OR
Inside Round or Sirloin Tip Marinating Steak, cut into
strips.) |
| 1/2 pouch |
|
Honey Garlic or Hot n' Spicy coating mix
(e.g. Shake 'n' Bake) |
| 8 cups |
(2 L) |
mixed baby greens OR bagged salad greens |
In small saucepan over low heat, melt jam and stir in ginger
root, garlic and Hoisin sauce. Shake beef strips in bag
containing coating mix. Stir-fry beef in preheated
lightly-oiled skillet over medium-high heat for 2-3 minutes.
Pour jam mixture over beef, stirring for 1 or 2 minutes to
coat strips. Serve immediately over your favourite mixed
greens. Makes 4 servings.
