Curried Beef Stew

Curried Beef Stew
Warm up your taste buds with the exotic taste of this simple stew.
1/3 cup (75 mL) chopped onion
2 tbsp (30 mL) curry powder
1 bay leaf
1 lb (500 g) beef Stewing Cubes
1/2 cup (125 mL) EACH shredded cabbage and carrots (OR 1 cup / 250 mL bagged coleslaw mix
1/2 cup (125 mL) chopped green onion

In large lightly-oiled frypan, combine first 3 ingredients and 1 cup (250 mL) water. Cook over medium heat for 2 minutes. Add beef and simmer covered on stove or in 325¡F (160¡C) oven for 1 3Ú4 hours. Add vegetables and cook covered for another 15 minutes. Season with salt and pepper to taste. Remove bay leaf and serve beef curry with rice.

Makes 4 servings.

Time Saver Tip: To make this stew in a hurry, mix 1 pouch (approx. 56 g) quick stew mix with water according to package directions. Add beef and marinate in pot for 30 minutes. Bring to a boil, add first 3 ingredients and simmer covered for 15 minutes. Add cabbage, carrots and green onion and cook covered for another 15 minutes.
