Asian Cabbage Rolls

Asian Cabbage Rolls
1 large head of cabbage
Filling:
1 lb (500 g) ground chicken
3 garlic cloves,  minced
2 tsp (10 mL) fresh ginger, minced
1/2 tsp (2 mL) hot pepper flakes
2 cups (500 mL) cooked rice
1/2 cup (125 mL) chopped cilantro
4 green onions, sliced
1/2 red pepper, minced
5 mushrooms, minced
2 tbsp (30 mL) lemon juice
Sauce:
3 medium tomatoes, diced
3/4 cup (175 mL) soy sauce
1/2 cup (125 mL) rice wine vinegar
1 tbsp (15 mL) sesame oil
1/4 cup (50 mL) brown sugar
2 tbsp (30 mL) fresh ginger, minced

Remove core from cabbage. Put cabbage in a large plastic bag and freeze overnight. Thaw at room temperature until leaves are soft enough to work with. Trim the backbone from each leaf. In a skillet over medium heat, stir-cook ground chicken, garlic, ginger and hot pepper flakes until chicken is no longer pink. Remove from heat and let cool. Mix cooled chicken mixture with remaining filling ingredients. Refrigerate until ready to make rolls. Put about 1/4 cup of filling in each leaf. Tuck sides in and roll leaf around filling. Put roll into a large casserole dish. Repeat until all filling has been used. Spread tomatoes over rolls. Combine remaining sauce ingredients and pour over rolls. Cover casserole and bake at 350ºF (180ºC) for 30 minutes. Remove cover and continue baking another 20 minutes. Makes 4-6 servings.
