Cajun Blackened Turkey Breast

Cajun Blackened Turkey Breast
4 - 6 oz (175 g each) turkey breast steaks OR pieces of turkey breast
2 tbsp (30 mL) melted butter
2 tsp (10 mL) oil
Cajun Seasoning:
2 tsp (10 mL) cracked black pepper
2 tsp (10 mL) onion powder
2 tsp (10 mL) paprika
1 1/2 tsp (7 mL) salt
1 tsp (5 mL) dried thyme
1/2 tsp (2 mL) garlic powder
1/2 tsp (2 mL) ground cumin
1/2 tsp (2 mL) cayenne pepper

Flatten turkey steaks to 3/8" (6 mm) thickness; brush with butter. In small bowl mix together Cajun Seasoning ingredients. Sprinkle over both sides of turkey to coat well. Heat oil in a heavy-bottom skillet over medium-high heat. Cook turkey 2 to 3 minutes per side. (It will smoke a bit).

Makes 4 servings.
