Rack of Pork with Herb Crust

cracked black pepper |

EACH basil, rosemary and thyme |
| 1/4 tsp |
(1 mL) |
EACH salt and garlic powder |
| 1/3 cup |
(75 mL) |
dried bread crumbs |

Dijon mayonnaise |
Pat surfaces of roast dry with paper towels. Combine seasonings and bread crumbs. Add
enough Dijon mayonnaise to bind mixture, about 1 tbsp (15 mL). Press onto surfaces of pork
roast. Roast uncovered at 325ºF (160ºC) for approximately 20-25 minutes per lb/500 g or
until meat thermometer reaches 160ºF (71ºC). Remove from oven and let rest 10 minutes
before carving. Makes 6 servings.
