Rack of Pork with Herb Crust

Rack of Pork with Herb Crust
3 lb (1.5 kg) Rack of pork
2 tsp (10 mL) cracked black pepper
1 tsp (5 mL) EACH basil, rosemary and thyme
1/4 tsp (1 mL) EACH salt and garlic powder
1/3 cup (75 mL) dried bread crumbs
Dijon mayonnaise

Pat surfaces of roast dry with paper towels. Combine seasonings and bread crumbs. Add enough Dijon mayonnaise to bind mixture, about 1 tbsp (15 mL). Press onto surfaces of pork roast. Roast uncovered at 325ºF (160ºC) for approximately 20-25 minutes per lb/500 g or until meat thermometer reaches 160ºF (71ºC). Remove from oven and let rest 10 minutes before carving.

Makes 6 servings.
