Millenni-YUM - Great New Recipes using Manitoba Foods

Double Fudge Brownies

Double Fudge Brownies
no-stick cooking spray
1/2 cup (125 mL) corn syrup
1/2 cup (125 mL) butter or margarine
5 squares semi-sweet chocolate
3/4 cup (175 mL) sugar
3 eggs
1 tsp (5 mL) vanilla extract
1 cup (250 mL) all - purpose flour
1cup (250 mL) chopped walnuts

Preheat oven to 350ºF (180ºC). Spray an 8-inch (20 cm) square pan with cooking spray. In a large saucepan, bring corn syrup and butter to a boil, stirring occasionally; remove from heat. Add semi-sweet chocolate; stir until melted. Add sugar. Stir in eggs, one at a time, then vanilla, flour and nuts. Pour into pan. Bake 30 to 35 minutes, or until toothpick inserted in centre comes out clean. Cool completely on rack. Prepare glaze; spread on top of brownies. Drizzle with white chocolate. Let stand until set. Cut into squares.

Makes about 16 brownies.

Chocolate glaze: In a small saucepan, melt 3 squares semi-sweet chocolate with 1 tbsp (15 mL) butter or margarine over low heat, stirring often. Remove from heat. Stir in 2 tbsp (30 mL) corn syrup and 1 tsp (5 mL) milk.

Chocolate drizzle: 1 square white chocolate, melted, for garnish
