Layered Lemon Delight
|

| First Layer |
| 1 cup |
(250 mL) |
flour |
| 1 cup |
(250 mL) |
pecans, chopped |
| 1/2 cup |
(125 mL) |
butter, softened |
| Mix together and press into a 9"x13" (22x33 cm)
pan. Bake at 325ºF (160ºC) for 25-30 minutes, or until browned. Cool. |

| Second Layer |
| 8 oz pkg. |
(250 g) |
cream cheese, softened |
| 1 cup |
(250 mL) |
icing sugar |
| 1 cup |
(250 mL) |
real whipping cream |
| Cream cheese and icing sugar using an electric mixer. In a
separate bowl, whip whipping cream until soft peaks form. Fold whipped cream into cream
cheese mixture. Spread over cooled base. |

| Third Layer |
| Prepare 1 large package lemon pie filling*. Cool, stirring
often. Pour over second layer. * Could use canned. |

| Fourth Layer |
| 2 cups |
(500 mL) |
real whipping cream |
| 3 tbsp |
(45 mL) |
icing sugar |
| 1 tsp |
(5 mL) |
vanilla |
Beat whipping cream, icing sugar and vanilla until stiff. Spread over third layer. Garnish
with chopped pecans. Makes 20 servings (if cut 4" x 5").
