The demand for Oriental vegetables by consumers has seen an upsurge over the past few
years, as people look for new taste sensations and healthier eating habits. Oriental
vegetable varieties are generally low in calories, high in flavour and nutritional value,
and quite easy to prepare. These vegetables can be prepared and used in traditional
Oriental recipes, or can be easily adapted for use in a wide range of conventional western
dishes. We encourage you to experiment with your favourite recipes, substituting Oriental
varieties in place of traditional vegetables. As an example, for a subtle change of
flavour try substituting Sin Qua or Mao Gua in recipes calling for Zucchini.
The following pages contain a mixture of Oriental and Western recipes, as well as brief
explanations on the varieties included in this guide. The recipes contained in this book
are only a small sample of the possibilities available using Oriental vegetables. Check
out your favourite bookstore or local library, for a wide range of cookbooks, which
specialize in many styles of Oriental cuisine. Ingredients for these recipes are easily
obtained from your local Oriental market or grocery store.
