Spirited Entertaining: Great New Recipes Using Manitoba Foods

Kahlua Barbecued Wings

Sweet and spicy with a hint of coffee - these wings are perfect party fare.
3 lbs (750 g) CHICKEN WINGS
3/4 cup (175 mL) Kahlua
1/2 cup (125 mL) chili sauce
3 tbsp (45 mL) pineapple juice
2 tbsp (25 mL) cornstarch

Preheat oven to 375°F.

Remove tips from wings and discard tips. Cut wings into wingettes and drumettes and place on a foil covered baking sheet. Bake for 30 minutes. Remove pan from the oven and drain off any juices.

In a saucepan over medium heat, combine Kahlua and chili sauce. Mix pineapple juice and cornstarch until smooth. Add to Kahlua mixture and stir cook until sauce thickens.

Increase oven temperature to 400°F. Generously brush sauce on wings. Bake for another 20-30 minutes, turning wings at least once and brushing with remaining sauce. Serve immediately.

Makes: About 10 appetizer servings.

Tip: These wings can also be done on the barbecue. Leave wings whole and grill over medium heat, with the lid down, for about 15 minutes. Turn wings at least once. Brush generously with sauce and grill for 10 minutes. Turn wings, brush with remaining sauce and continue grilling for 5-10 minutes.
