Spirited Entertaining: Great New Recipes Using Manitoba Foods

Black Forest Trifle

For the black forest cake fans - you’ll love this easy-to-make, delectable trifle. Although any chocolate cake will do - the chocolate buttermilk cake recipe provided is fabulous.

1 (1) package (4-serving size) instant chocolate
2 cups (500 mL) MILK
2 cups (500 mL) WHIPPING CREAM, whipped
1 - 8" (1 - 20 cm) baked chocolate buttermilk cake, cut into 1" (2-cm) pieces (recipe below)
1/4 cup (50 mL) Kirsch or maraschino cherry juice
2 - 14 oz (2 - 398 mL) can  pitted cherries, drained

Prepare chocolate pudding according to package directions with the two cups of milk. Refrigerate until needed. Whip whipping cream until soft peaks form. Spread one third of whipped cream into bottom of 10-12 cup (2.5-3 L) glass serving bowl. Top with half the chocolate cake pieces. Sprinkle with half the Kirsch. Top with half the cherries. Spread with half the pudding. Repeat layers of one-third whipped cream, remaining cake, Kirsch, cherries and pudding. Top with remaining whipped cream. Cover. Refrigerate 4 hours or overnight. To serve, garnish with grated chocolate and maraschino cherries, if desired.

Makes 10 to 12 servings.

Chocolate Buttermilk Cake (for trifle)
1 cup (250 mL) all purpose flour
1 tsp (5 mL) baking soda
1/4 tsp (1 mL) salt
1/2 cup (125 mL) BUTTER, room temperature
1 1/4 cups (300 mL) packed brown sugar
1 1/2 sq (1 1/2 sq) unsweetened chocolate, melted
2 (2) eggs
3/4 cup (175 mL) BUTTERMILK
1 tsp (5 mL) vanilla

In small bowl, stir together flour, baking soda and salt. Set aside. In large bowl, cream together butter and brown sugar until blended. Add melted chocolate. Blend until smooth. Add eggs. Beat well. Add flour mixture alternately with buttermilk to creamed mixture, beginning and ending with flour mixture. Add vanilla. Beat well. Pour batter into greased 8x8-inch (20x20 cm) cake pan. Bake at 375°F (190°C) 35 - 40 minutes or until toothpick inserted in centre comes out clean. Cool completely on wire rack.

Makes 1 cake.
