Spirited Entertaining: Great New Recipes Using Manitoba Foods

Fresh Fruit Tart

Even more delicious that it looks, this fruit tart is bound to impress your company. Serve with a complementary wine such as Samos dessert wine from Greece.

Crust:
1/2 cup (125 mL) BUTTER, room temperature
2 tbsp (25 mL) sugar
1/4 cup (50 mL) ground almonds
1 tbsp (15 mL) Amaretto liqueur or
1/2 tsp (2 mL) almond extract
1 cup (250 mL) all purpose flour

Cream together butter and sugar. Beat in almonds and liqueur. Gradually blend in flour. Press dough into 9-inch (23-cm) flan pan, tart pan or pie plate. Bake at 300°F (150°C) 25 - 30 minutes or until golden. Cool.
Vanilla Cream Filling:
1/3 cup (75 mL) sugar
3 tbsp (45 mL) cornstarch
dash of salt
2 cups (500 mL) MILK
2 (2) egg yolks, lightly beaten
2 tbsp (25 mL) BUTTER
2 tsp (10 mL) vanilla

In medium saucepan, blend together sugar, cornstarch and salt. Combine milk and egg yolks. Gradually stir milk mixture into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat. Stir in butter and vanilla. Cool, covered with plastic wrap directly on surface. Pour into baked cooled crust.
Topping and Glaze:
3 cups (750 mL) sliced fresh fruits or berries or canned fruit, well-drained
1/2 cup (125 mL) apricot jam, heated then sieved
1 tbsp (15 mL) apricot brandy or lemon juice
1 cup (250 mL) WHIPPING CREAM, whipped

Arrange fruit in attractive design over filling. In small saucepan, heat apricot jam over low heat until melted. Sieve apricot jam to eliminate lumps and pulp. Stir in apricot brandy. Cool slightly. Brush or spoon over fruit. Chill thoroughly. Top with whipped cream before serving.
