Spirited Entertaining: Great New Recipes Using Manitoba Foods

Apple Clafoutis

An elegant and easy way to use Manitoba’s fall apple harvest.

2 tbsp (30 mL) butter or margarine
6 cups (1500 mL) pared and sliced apples
1/2 cup (125 mL) milk
1/3 cup (75 mL) all purpose flour
1/4 cup (50 mL) sugar
3 (3) EGGS
2 tbsp (30 mL) apple brandy or rum (optional)
1/4 tsp (1 mL) baking powder
pinch (pinch) ground cinnamon

In frying pan, melt butter over medium heat. Sauté apples until tender, 6 to 8 minutes. Arrange apple slices in greased 2-quart (2 L) shallow baking dish.

In blender or food processor, blend all other ingredients until smooth.

Pour batter over apples, separating slices with fork and allowing batter to flow between.

Option: If you love cinnamon, combine 1 tbsp (15 mL) sugar and ½ tsp (2 mL) ground cinnamon; sprinkle on top before baking.

Bake at 350° F (180° C) for 45 to 50 minutes or until knife inserted in centre comes out clean. Serve warm.

Makes 6 to 8 servings.
