Spirited Entertaining 2: Great New Recipes Using Manitoba Foods

Turkey Wontons

Guests will gobble these up
1 lb (500 g) ground turkey
2   cloves garlic, minced
1 tsp (5 mL) dried thyme
    salt & pepper, to taste
1 pkg (250 g) light cream cheese
1 bunch   green onions, chopped
1 pkg   wonton wrappers
3 cups (750 mL) canola oil, for frying
In a large nonstick skillet, cook turkey, stirring and separating until pink disappears.

In a separate bowl, combine garlic, thyme, salt and pepper, cream cheese and green onions. Add turkey and stir to combine. Put 1 tsp (5 mL) of filling in the center of each wonton wrapper. Wet edges with water; fold to form a triangle. Press around edges to seal. Wet both side points and pinch together over center. Heat oil to 375°F (190°C) in a deep fryer or large, heavy bottomed pot. Fry wontons, a few at a time, until golden brown (about 2 minutes). Drain on paper towels. Serve hot with dipping sauce.

Makes: about 50 wontons.

Sherry Orange Sauce: Combine 1 can (355 mL) frozen orange juice concentrate, 1 tbsp (25 mL) minced fresh ginger and 1/3 cup (15 mL) sherry in a saucepan and bring to a boil. Serve.

Sesame Scallion Sauce: Whisk together 1⁄2 cup (125 mL) rice vinegar, 2 tbsp (25 mL) sesame oil, 2 tbsp (25 mL) oyster sauce, 5 green onions, chopped and 2 tbsp (25 mL) vegetable oil. Serve.
