| To make tournedos, lay chicken
breasts flat (smooth side down) on a cutting board. Fold
breasts in half and wrap a slice of bacon around the outside
of each breast. Tie each breast and bacon strip with a piece
of string. Place tournedos in a shallow dish and season with
salt, pepper and lemon juice. Let them marinate for about 10
minutes.
Preheat oven to 375°F (190°C). Set aside 1 tbsp (15 mL)
butter or oil to use in sauce. Melt remaining butter or oil
in a large oven-proof skillet over medium heat. Add
tournedos and brown for about 3 minutes per side. Put
tournedos in oven to finish cooking, about 20 minutes or
until a meat thermometer inserted in the tournedos reads
165°F (74°C).
While tournedos are in the oven, heat remaining butter in
a pot over medium heat. Add onion, celery, carrot and stir
fry 3 to 5 minutes, until onion is transparent. Add chicken
stock and cream; bring to a boil, then simmer until the
liquid is reduced by half. Pour sauce through a strainer and
keep warm until tournedos are finished. Remove tournedos
from the oven and transfer to a warm serving platter. Pour
Grand Marnier over tournedos and ignite. Once the flames die
out, top with sauce and serve immediately.
NOTE: Chicken breast tournedos (bacon-wrapped
chicken breasts) are available ready-made from some
specialty stores.
