Spirited Entertaining 2: Great New Recipes Using Manitoba Foods

Orange Glazed Turkey Thighs

Add Flare to your next dinner party with this flavourful dish.
1 lb (500 g) boneless, skinless turkey thighs
1 cup (250 mL) cooked rice
1/2 cup (125 mL) onion, chopped
1/2 cup (125 mL) carrot, grated
1   small apple, chopped
1 tbsp (15 mL) fresh parsley, chopped
1/2 tsp (2 mL) poultry seasoning
1/4 tsp (1 mL) each, salt & pepper
1/4 cup (50 mL) orange marmalade or any fruit jelly
1 tbsp (15 mL) orange liqueur
Lay turkey pieces on a flat surface and cover with plastic wrap. Pound with a meat mallet to flatten each piece to a uniform thickness of about 3/8 inch (1 cm). Set aside. In a large bowl, mix together rice and all remaining ingredients except marmalade and liqueur. Place a quarter of the rice mixture on each turkey thigh. Roll up, starting at the shortest end. Secure with toothpicks and place in a greased baking dish. Combine marmalade and orange liqueur; brush onto turkey. Cover and bake at 325°F (160°C) for 60 to 70 minutes, until turkey is tender.

Note: One large turkey thigh or turkey breast can be stuffed whole and then sliced for serving.
