Spirited Entertaining 2: Great New Recipes Using Manitoba Foods

Almond Crusted Turkey Steaks

This is a terrific, tasty way to cook turkey.
1/2 cup (125 mL) raw almonds, sliced or ground
1/4 cup (50 mL) grated Parmesan cheese
1/4 tsp (1 mL) dried basil
1/4 tsp (1 mL) paprika
    salt, to taste
3 tbsp (45 mL) each, butter & oil, divided
4   turkey breast steaks
or 4   turkey fillets
1/2 cup (125 mL) white wine or apple juice
2 tsp (10 mL) lemon juice
Combine almonds, cheese, basil, paprika and salt on sheet of waxed paper. Dip turkey steaks, into the mixture, coating both sides. Heat 1 tbsp (15 ml) each of butter and oil in 10 in. (40 cm) skillet. Add turkey steaks and brown over medium heat, turning once. Cook each steak about 10 minutes, or until no longer pink in the centre. Add remaining butter and oil as needed when cooking turkey. Remove turkey to heated serving platter. Once all turkey is cooked, add wine and lemon juice to skillet and boil rapidly until slightly thickened. Spoon sauce over steaks.
