Chicken Tequila Pasta

soy sauce |

oil, divided |

each, red & green pepper, thinly sliced |

fresh cilantro, chopped |

jalapeno pepper, seeds removed, minced |
| 1/2 cup |

chicken stock |

tequila* |
| 2 tbsp |
(30 mL) |
lime juice |

whipping cream |
| 2 lbs |

fresh spinach fettuccini |
| Combine chicken
and soy sauce in a bowl and chill until needed. Heat 1 tsp
(5 mL) oil in skillet over medium heat; add onion and
peppers. Stir fry until onion softens. Remove from pan and
set aside. Heat remaining oil in the same skillet over
medium heat; add cilantro, garlic and jalapeno and stir fry
2 to 3 minutes. Add chicken stock, tequila and lime juice.
Bring to a boil and cook until liquid has evaporated, 5 to 7
minutes. Add chicken, soy sauce and cream to skillet. Bring
to a boil, stirring constantly. Heat until chicken is cooked
through and sauce is thick, 7 to 10 minutes. Stir in onion
and peppers. Cook fettuccini in rapidly boiling water for
about 3 minutes or until tender. Drain well and toss with
sauce. Spoon into pasta bowls and garnish with cilantro
leaves if desired. Serve with crusty rolls for mopping up
the sauce.
*Vodka, either regular or lemon flavoured, can be used
instead of tequila.
