Spirited Entertaining 2: Great New Recipes Using Manitoba Foods

Chicken Tequila Pasta

"Wow" and "Olé" define the response to this dish.
1 lb (500 g) boneless skinless chicken breasts, cubed
3 tbsp (45 mL) soy sauce
1 tbsp (15 mL) oil, divided
1/2   red onion, thinly sliced
1   each, red & green pepper, thinly sliced
1/3 cup (75 mL) fresh cilantro, chopped
4   cloves garlic, minced
1   jalapeno pepper, seeds removed, minced
1/2 cup (125 mL) chicken stock
2 tbsp (30 mL) tequila*
2 tbsp (30 mL) lime juice
1 cup (250 mL) whipping cream
2 lbs (1 kg) fresh spinach fettuccini
Combine chicken and soy sauce in a bowl and chill until needed. Heat 1 tsp (5 mL) oil in skillet over medium heat; add onion and peppers. Stir fry until onion softens. Remove from pan and set aside. Heat remaining oil in the same skillet over medium heat; add cilantro, garlic and jalapeno and stir fry 2 to 3 minutes. Add chicken stock, tequila and lime juice. Bring to a boil and cook until liquid has evaporated, 5 to 7 minutes. Add chicken, soy sauce and cream to skillet. Bring to a boil, stirring constantly. Heat until chicken is cooked through and sauce is thick, 7 to 10 minutes. Stir in onion and peppers.

Cook fettuccini in rapidly boiling water for about 3 minutes or until tender. Drain well and toss with sauce. Spoon into pasta bowls and garnish with cilantro leaves if desired. Serve with crusty rolls for mopping up the sauce.

*Vodka, either regular or lemon flavoured, can be used instead of tequila.
