Spirited Entertaining 2: Great New Recipes Using Manitoba Foods

Chocolate Lava Cake with Raspberry Sauce

A warm, decadent, molten chocolate centre oozes from the rich chocolate cake.
3 1/2 squares (1 ounce each) semi-sweet chocolate
1/2 cup (125 mL) canola oil
2 eggs
2 egg yolks
2 tbsp (30 mL) sugar
1/4 cup (50 mL) flour, sifted
Preheat oven to 350°F (180°C). Cut up 2 1/2 squares of the chocolate into small pieces and place in a metal bowl with canola oil. Place over a simmering pot of water to melt chocolate and set aside to cool slightly. Beat eggs and egg yolks with sugar on medium speed for about 5 minutes until light and fluffy. Add cooled chocolate mixture to egg mixture; then add flour. Beat until fluffy and glossy, about 5 minutes. Grease 4, 3 in. (8 cm) ramekins and dust with sugar and flour. Cut remaining chocolate square into four equal pieces. Fill ramekins half full with batter and add a chocolate piece (the lava) to the centre of each ramekin. Add remaining cake batter to fill ramekins three-quarters full. Bake for 15 to 20 minutes. The surface of the cakes will lose their shine when done, centre will be wobbly. Run a butter knife around the edge of the cake to loosen and tip out onto plate. Serve with raspberry sauce.
Raspberry Sauce:
8 ounces (250 g) fresh or frozen raspberries
2 tbsp (30 mL) lemon juice
1/4 cup (50 mL) sugar
1/3 cup (75 mL) Framboise liqueur or water
In a saucepan, add raspberries, lemon juice, sugar and Framboise and bring slowly to a boil. Simmer for a few minutes. It can be served immediately or run through a nylon sieve to remove seeds. (Do not use metal, or fruit will have a metallic taste.)

Note: This dessert can be made ahead of time and frozen. Prepare ramekins but don’t bake them; wrap them in plastic and place in freezer. There is no need to defrost, just bake in the oven for 35 minutes at 350°F (180°C).
