Spirited Entertaining 2: Great New Recipes Using Manitoba Foods

White Chocolate Graham Slice

Simple and decadent, this is deliciously easy to make.
2 cups (500 mL) whipping cream
6 squares   Baker's white chocolate, finely chopped
1 pkg (10 oz/300 g) frozen raspberries, thawed & drained
1 sleeve (7 oz/200 g) graham wafers (28 sqares)
Whip cream until stiff peaks form. Fold in chocolate. Measure out about 1/3 of the mixture into a separate bowl. Fold raspberries into the smaller portion of the cream mixture. Spread equal amounts of the raspberry mixture between two graham wafers. Sandwich wafers together on their sides into a long row in a shallow dish. Using a clean knife, spread reserved cream mixture evenly all over the three exposed sides of graham wafers making a log and decorate with swirls or a cake comb. Cover with a cake dome or bowl. Refrigerate until frosting is firm. Cut on diagonal into slices. (Source: Bake Fest 2001)
