White Chocolate Graham Slice

| Simple and decadent, this is deliciously
easy to make. |
| 2 cups |
(500 mL) |
whipping cream |
| 6 squares |
|
Baker's white chocolate, finely chopped |
| 1 pkg |
(10 oz/300 g) |
frozen raspberries, thawed & drained |
| 1 sleeve |
(7 oz/200 g) |
graham wafers (28 sqares) |
| Whip cream until stiff peaks
form. Fold in chocolate. Measure out about 1/3 of the
mixture into a separate bowl. Fold raspberries into the
smaller portion of the cream mixture. Spread equal amounts
of the raspberry mixture between two graham wafers. Sandwich
wafers together on their sides into a long row in a shallow
dish. Using a clean knife, spread reserved cream mixture
evenly all over the three exposed sides of graham wafers
making a log and decorate with swirls or a cake comb. Cover
with a cake dome or bowl. Refrigerate until frosting is
firm. Cut on diagonal into slices. (Source: Bake Fest 2001)
