The goat milk industry has been established in Manitoba since the 1980s with the formation of Oak Island Acres Goat Dairy.  They would like to expand operations at their dairy site by increasing the goat herd for milking and introducing specialty chevre cheeses and yogurt into the marketplace. 

 

Through this project, the Department of Food Science, University of Manitoba will research and formulate recipes for varieties of chevre cheese to include feta, cheddar and soft cheese varieties, and for fruit bottom yogurt.
