Red River College: Culinary and Baking

Dates: March 3rd – May 6th, 2020
Days of the week: Tuesday, Wednesday and Thursdays 3:30 – 7:30pm
Location: Red River College, 504 Main Street

Since 2013 Red River College has partnered with the province of Manitoba to offer the After School Leaders Culinary program. Classes are held at the Paterson GlobalFoods Institute two to three times a week for 9-10 weeks, offering the students a total of 90 hours of hands-on training in our culinary and baking labs. Instructors are graduates of the Culinary Arts program at RRC and are well-versed in leading classes of up to 16 students through this introduction to foodservice.
Our curriculum covers entry level training to a broad stroke of areas within professional culinary arts. Students begin the term with a knife skills class which sets them up for success for the remainder of the program. Daily in our labs, students work on their own or in teams to prepare the assigned recipes after a demonstration and instruction time. In baking classes, we cover everything from cookies to pastries, yeast baking and custards. In our culinary classes, several days are focused on cultural food studies, while also highlighting nutrition, food allergies, and sensory development. Students go on a field trip where they grocery shop according to a budget, with shopping lists they produce as a group, based on recipes they select. We return to the culinary lab to create their menu, which completes a menu planning project where emphasis is put on being involved in knowing how to best utilize your time, money and resources when it comes to everyday food preparations. Students also study and write the provincial Food Handler's test as well as study the WHMIS system.

The program concludes with a reception, which highlights the students’ accomplishments and growth, as they prepare and serve a wonderful sampling of appetizers and desserts to supporters of the program, and to friends and family.
