Shelf Life Study Services

The Food Development Centre (FDC) performs real time shelf life testing.  We offer analytical testing (pH, water activity, moisture, brix, colour, viscosity, total solids), microbiological testing (aerobic plate count, yeast, mold, total coliforms, E.coli), and sensory evaluation (aroma, appearance, texture, flavour). 
 
Additional tests (Salmonella, Listeria monocytogenes, Staphylococcus aureus, peroxide value, hexanal) can be tested at a subcontracted lab.
 
Food with less than 90 days shelf life must have a best before date on the label. For more information, please visit the Canadian Food Inspection Agency website.
 
To provide a shelf life study, FDC requires the following product information:
   -  Product description
   -  Package type (i.e. 250ml glass jar)
   -  Storage conditions (i.e. refrigerated, shelf stable)
   -  Expected shelf life 
   -  Contact name, address, phone number, email
 
Confidentiality:
All work is treated with strict confidentiality. Results are released only to the client who orders the work unless otherwise specified in writing. 
 
Test Results:
A Certificate of Analysis (C of A) is issued upon completion of testing as outlined in the proposal. All certificates are issued in a standardized format.

Samples can be dropped off Monday – Friday 8:30 am to 4:00 pm.

Samples received after 3:00 pm will not be entered into the system for analysis until the next business day.
